Citrus-Cilantro Wet Spice Rub
From: Cook's Illustrated 2000 Beer Can Chicken
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon ground coriander
- 1 Tbsp. juice from 1 orange
- 1 1/2 teaspoons juice from 1 lime
- 1 1/2 teaspoons extra-virgin olive oil
- 1 small garlic clove, minced very fine
- 1 Tbsp. minced fresh cilantro leaves
For extra spiciness, add up to 1/2 teaspoon cayenne pepper.
Combine all ingredients in small bowl and use immediately
